Only the eggs of Horseshoe crabs are edible, not the meat which can cause dizziness and other intestinal problems. It takes a skilled cook to know how to remove the eggs without contaminating them the dangerous parts of the crab. Prepared correctly, this is a traditional delicacy that's supposed to be delicious.
