The gills are removed immediately after being caught, then the head is bent forward to fit into standard sized bamboo steamers. This is the traditional preparation. Then the mackerel is boiled in sea water with added salt, and finally fried. It is served with an exotic spicy sauce with rice.

Clockwise from the right: Rambutan (hairy-spikey looking fruit - similar taste to Lychee); Champoo (mountain apple - like a cross between pear and apple); don't know about the white fruit in the bags; Mangosteen (tangy, sweet, orange, strawberry taste and my favorite); Langsart (above right to the Mangosteen - I don't recall sampling this one); Longan (above left to the Mangosteen - similar to Lychee); Asian Pear (wrapped in foam - must be imported?); and finally Noi Na (AKA Custard Apple and Soursop - I just remember this being sweet).
